cardamom cookies
(makes a really small batch. double the recipe if you want!)
pre-heat oven to 350 degrees
in one bowl:
1 cup whole wheat flour
1/4 cup tapioca flour
1 tbsp. ground cardamom
1 tsp. ground ginger
1 tsp. ground cinnamon
1 tsp. baking powder
pinch sea saltin another bowl:
1/2 cup sugar (i used turbinado cane sugar)
1/4 cup maple syrup
1/4 cup canola oil
1/4 cup orange juice
zest of one orange
combine all ingredients. put a spoonful of the dough onto a greased cookie sheet and bake for 15 min. or so, depending upon your oven.
